Raisinets Overnight Oats

Raisinets overnight oats is the latest recipe in my series based on popular desserts, and was by far the most difficult to get just right! Before arriving at the recipe you see here, I’ve gone through at least four or five different iterations. But I finally think this mix hits the correct blend of raisins and chocolate along with the proper oatmeal texture to start your day just right!

Ingredients (Serves 4)

  • 3 tbsp 100% cocoa powder
  • 1 tbsp confectioners sugar
  • 1/2 cup raisins
  • 1 cup old-fashioned oats
  • 1 3/4 cup chocolate unsweetened almond milk
  • 2 tsp chia seeds
  • 1 tsp vanilla extract
  • 2 tbsp maple syrup

Melts in Your Mouth & Your Hands…

First up is raisin prep. Combine 1 tablespoon of the cocoa powder with the confectioners sugar until blended. Toss in the raisins until well coated. Make sure to separate the raisins so that you end up with individually coated raisins, rather than stuck together raisin clumps. You might need to get in there with your fingers to do this… and yes, it’s a bit messy. Once the raisins are well coated, set aside.

Now Comes the Tricky Part…

The ingredients for the oat base are simple, but getting the texture just right was an issue. It took me several attempts until I was happy with it. If you find issue with the texture the first time you make it, it most likely stems from the next few steps. At the end I’ll give you some tips for how to adjust if needed.

Start by combining 1/4 cup of oats, 1/2 tbsp of cocoa and 1/2 tsp of chia in each of your four overnight oats serving containers. Then to each container add 1/4 cup of chocolate almond milk plus an additional 3 tbsp. Mix well.

Next add 1/4 tsp vanilla extract and 1/2 tbsp of maple syrup to each container and mix well again. The mixture should feel very loose at this point as the chia seeds will do a lot of tightening up overnight.

If for some reason when you try the finished product you still find it to be too loose for your tastes, however, just remove 1 tablespoon of almond milk from the recipe. If you’d like it a bit looser? Replace the chia seeds with ground brown flax (or leave them out entirely).

Finally take your chocolate covered raisins and add them to your oat mix.

The 1/2 cup of raisins is the equivalent of eight (8) tablespoons, so add 1 tablespoon into each container and gently mix into the oat mixture until the raisins are fully submerged. For the second tablespoon, try to submerge about half of it, but then leave about half on the surface.

Seal your containers and refrigerate for a minimum of 5-6 hours but preferably overnight.

To serve, I recommend warming in a microwave for 30-60 seconds before mixing well to distribute the loose chocolate. The heat will also plump up the raisins slightly.
