I mean… it’s apple pie. How hard do I really need to sell this one? Despite the fact that there’s a bit of prep work involved, it does make four servings, so your return on investment is well worth it, especially once you taste it. I’ve recounted the calories on this recipe several times, each time saying “this can’t be right – it tastes too good for 180 calories”. I highly recommend giving this one a shot, especially if you’re at all skeptical about the concept of of overnight oats. This will make you a fan!

Ingredients (serves 4)

  • 1 cup Old-Fashioned Oats
  • 1 1/2 cups unsweetened original almond milk
  • 4 tsp ground brown flax seed
  • 2 tbsp (0.5 oz) pecan chips
  • 1 tbsp light brown sugar
  • 1 medium/large Honey Crisp apple, peeled, cored and sliced
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • 1/4 tsp apple pie spice
  • 1 pinch nutmeg

Step 1: Quick Candied Pecans

To say we’re going to “candy” the pecans is generous. More truthfully it’s a quick sugar coating. Take the pecans and the brown sugar and toss in a small microwave safe bowl. Add one tsp of hot water and heat for 30 seconds.

Stir to make sure the pecans are well coated and then spread them out on a piece of parchment paper or wax paper to cool.

Step 2: Apple Prep

This is the most time consuming part of the whole process, and well worth it. I have several other versions of overnight oats using apples (coming soon) which normally just used diced apples, often uncooked for a nice crunch, but what unlocks the real “Apple Pie-ness” of this recipe is this step. So take a few minutes and get it right. You’ll be happy you did.

Peel the apple and core and segment it. Take each segment and put it flat side down on your cutting board and make even, thin slices from each segment.

Coat a medium sauce pan with non-stick spray and heat over medium heat, adding the apple slices, the cinnamon, apple pie spice, nutmeg and the maple syrup. Cook down until the apples are tender, approximately five minutes.

Step 3: Get Your Oat Base Ready

While the apples are cooking, start to fill your overnight oats containers. Into each of the four servings add 1/4 cup of oats, 1 tsp ground flax and 1/4 cup (plus an additional 2 tbsp) of almond milk.

Mix well and set aside.

Step 4: Final Assembly

When the apples are ready, divide them evenly and place them in each jar on top of the oat mixture. Do not stir them in. Make sure to get all that nice apple pan sauce that was left over and spoon it over the apples in each jar.

Then divide up the coated pecans and spoon them on top of the apples, and seal the jars.

Refrigerate for a minimum of 4-5 hours but preferably overnight.

To serve in the morning, I highly recommend heating these oats for one minute, decanting into a small bowl and mixing well.
