As the weather heats up it’s a great time to bring out the tropical flavors, such as this easy Pina Colada Overnight Oats recipe. Even though it feels like a winter breakfast, the appetite-satisfying role of oatmeal can be part of any weight loss program all year long!

Ingredients (makes 4 servings)

  • 1 cup old-fashioned oats
  • 2 tsp vanilla extract
  • 2 tbsp maple syrup
  • 1 cup unsweetened original almond milk
  • 1 ripe banana
  • 1/4 cup unsweetened coconut flakes
  • 1 8 oz can of crushed pineapple in juice

Make the Oat Base

The first step is to make the oatmeal base. As this is an overnight oats recipe with a very wet topping, there is no need to exceed the standard 1:1 ratio of oats to milk.

Into each of your four overnight oats containers combine 1/4 cup of oats, 1/4 cup of almond milk, 1/2 tbsp of maple syrup and 1/4 tsp of vanilla extract. Mix well and set aside.

The “Secret” (Hint? It’s a Banana)

Ok, so not so much of a secret. Even so… while this will taste of pineapple and coconut, the use of banana here is more so as a sweetener and to reinforce the “tropical” nature of this recipe. If you make a lot of smoothies, you’ll recognize this as the same way that frozen bananas are often used in those recipes.

Because you don’t want the taste of the banana to stand out, it’s best to mash it well with a fork, trying to limit any chunks. Go for a banana paste or pulp if possible. Much like if making banana bread, actually. And just like with banana bread, the riper the banana, the better.

Time for the Pina and… the Coconut

People often think Pina Colada is short for “pineapple” and “coconut” when it really means “pineapple, strained”. And since this recipe is so easy, it’s really all “pina” and no “colada”.

Simply add the can of pineapple and the 1/4 cup of shredded coconut to the mashed banana and mix well. Then divide evenly and spoon onto of each of your oatmeal bases. Seal the containers and refrigerate for 5-6 hours at minimum, but preferably overnight.

I prefer to warm my overnight oats in the microwave for 60 seconds before serving, but that’s personal preference. Either way, I highly recommend mixing oats and fruit together before eating — whether warm or cold.
